    My girlfriend and I spent a full weekend at Thyme in the Country B&B, and were charmed from the moment we got to the house late Saturday afternoon. The rustic scenery, the land and farm animals, and the way the house and outside shed were decorated gracefully with antique furniture, tools and wall hangings brought us to a completely different place and time. The owners are extremely hospitable, and we felt right at home as soon as we entered the house. We were pleasantly surprised by the evening snack tray and honey-ginger tea that filled and warmed our bellies from the cold weather, as we really expected nothing more than a breakfast, typical of most B&B places. Without a doubt, I could easily tell that this is not just a business to Mary and Bill, but more of a passion that is integrated into their daily life. The food was amazing, ingredients obtained from local markets and farms, and the eggs, sausage and bacon came right from their backyard. The house is cleaned with all-natural solutions, as the owners are very much attuned to the importance of environmental responsibility and sustainability. We will definitely come back to Thyme in the Country on future getaways, and will wholeheartedly recommend this B&B to our friends and family.

    My family and I stayed here while attending a family wedding in June. Mary and Bill were completely gracious and lovely. Bill was nice enough to wait up a little late for us so we could check in despite that we arrived later than we said. Upon entering our rooms, we were pleased to see that they were, clean, cute, and comfortable. In the morning we were greeted by his wife mary who served some absolutely delicious breakfast made from local produce (including some from her garden). My favorite part about the experience was the charm of being on an active farm. It's clear from the location and how mary and bill speak about their home that they care deeply about responsible and eco friendly farming and taking good care of their animals. Mary encouraged us to go check out the animals, pick eggs, and take a look at her impressive garden - very charming. The second day when my 3 year old niece arrived, Mary made sure my niece had plenty to do, opening up her home and her children's old toys to her. They also have an adorable tree swing, chair swing, hammock, and pool - amenities we only wish we had more time to use. I recommend this bed and breakfast whole heartedly to anyone staying in the hudson area. - Mary

    I have stayed at Thyme in the Country several times now and have loved every minute of it! Mary and her family are incredibly friendly, accommodating, and committed to making your stay as comfortable as possible. There are endless things to do around the house and farm--during my stay I helped to feed the new calf, collected eggs, and walked in the beautiful pastures behind their home. When I most recently stayed this winter, I spent a lot of time next to their fireplace relaxing with a book. Mary and her daughter Jennie cooked us breakfast in the mornings and it was fantastic! They served me and my boyfriend homemade yogurt, apple sauce, the fluffiest pancakes, and bacon that came from their own pigs. We will definitely be back in the Spring.

    My husband and I spent 2 glorious days with Mary Koch here at this sweet, beautiful and restful retreat. She is a terrific host, the breakfasts are lovely, the atmosphere could not have been more welcoming and the grounds are beautiful. Late night snacks (home made) are provided and my dietary needs were graciously accommodated. Mary helped us plan outings and all her suggestions were spot on. I would return to this little gem in a heartbeat.

    A slice of Heaven on Earth.... This place truly awakens & heightens your senses.... The food tastes... fresh & delicious. Mary is an excellent & creative cook. One can hear... natures peace & quiet amid a symphony of farm animals. One can smell... clean fresh air, flowers in bloom , wood crackling in the fireplace and good home cooking... One can see... green meadows, farm animals, an inviting salt water pool, a relaxing hammock, blooming flowers, vegetable gardens, a badminton court, a chicken coup & very hospitable hosts....Mary & Bill. One can touch... fresh warm eggs from the chickens ,home made soaps, comfy blankets, fresh garden vegetables & herbs, fruit from the trees & two small friendly dogs. Truly a place to remember!
